Section I, History: This is about your old world winery, give its Name, then its history, the style of its wines, the grape blend used there, and wine-making details, including aging. In a couple of beginning paragraphs, describe your target winery its history and wine style. Include some History of the old world winery and its terroir. This does not have to be long, but it should give the references for where you got the history information. Web sites are not allowed for the history unless nothing is in the two major Bordeaux references in the Rosen Library. Section II Introduction to New World: Combines the information from the old world, and your research about the new world site that matches the old world. Be careful to properly cite your references as you did in the Exercise 2, use at least two of the recommended sources about your wine region (on reserve) as well as web sites. Section III: Location in New World: Give the AVA and Sub AVA (if available) to your New World Location. It must be outside of Europe (US, Australia, South America, South Africa). Describe the New World location and why you chose that site, i.e.; how does that site match the old world site, in other words give it Terroir. Choose the best place to make this wine, look at where it is made and use the best of those sites. Give specific AVA, eg; not Napa but Rutherford which is a sub AVA of Napa. It must be a prime site, so marginal locations such as Oregon, Texas, Michigan, Virginia or New Zealand are not good choices. The quality of the location for your wine is part of the grade Section IV, Wine-Making: This should be the most detailed section (See lectures 1 and 2 for background information). Fining process or other clarification, h. Temperature control or not in fermentation, i. Aging, how long, what kind of barrels (American Oak or French Oak), how long in barrel?, j. Wine Quality describe the color, bouquet and flavor of your new wine. Give the style of the wine you just made. Section V Label and Name: a Name your new winery. b. Label: Make a mock label, at least give all information that you will put on the label, some are required by law (look that up, especially the warnings), give the actual information not just a mention that they exist. For bonus points give label jpeg with art work. Label Details: Be complete remember that some details are required by law. Look up legal requirements or just examine a label of a US wine, both front and back labels! Don’t just remark that there are legal label requirements, be sure to include the exact wording required by law and all label details required by international agreement such as: volume, country of origin, producer name, alcohol percentage and actual sub AVA. Section VI: Bibliography: APA guidelines must be followed. Use at least one referred article or book, especially Cocks and Feret, or Bordeaux and its wines on reserve. Web sources may be used for the old world winery information, but realize that this may be marketing hype. Give it your personal stamp by naming the new world winery and develop a unique label.
